BONEFISH GRILL TUSTIN OPENS TODAY, NOVEMBER 19
"The Fresh Fish Experts" First Restaurant in California

TUSTIN, Calif. - Bonefish Grill, the award-winning national collection of fresh fish restaurants, debuts today in California at The Market Place in Tustin. This sleek 5,200-square-foot eatery features indoor and outdoor dining serving lunch and dinner daily and brunch on Sunday. An expansive Big-City Bar offers hand-crafted cocktails, craft beers, a "Happier Hour" and 30 wines by the glass. Additionally, the Tustin locale was selected to introduce Bonefish Grill's new contemporary design leading the roll-out phase for other locations.

THE FOOD & BEVERAGES
Started by fish aficionados and adventurers Chris Parker and Tim Curei in 2000 in St. Petersburg, Fla., Bonefish Grill was created to take the mystery out of eating fresh delicious fish from around the world.

Corporate Chef Mark Adair and his culinary team specialize in preparing globally and locally sourced fish, some procured from Santa Monica Seafood. Fresh fish such as Pacific Salmon and Swordfish are caught at their seasonal peak, hand-cut daily and cooked on a wood-burning grill. Steaks, pork chops and chicken dishes are also prepared on the grill. Market fresh specials change daily and feature special sauces such as Spinach Bacon Gorgonzola. Appetizers and "hand held" include Bang Bang Shrimp, Ahi Tuna Sashimi, "American Style" Kobe Beef Burgers, Fish Tacos, Carlsbad Mussels Josephine, Chef's Creek and Fanny Bay Oysters and Bonefish Grill Tustin's signature Wood-Grilled Artichokes. Everything is presented by friendly, well-trained, professional anglers (servers).

A daily "Happier Hour" from 4 to 6:30 p.m. offers specially priced drinks. Available all day are four $5 hand-crafted cocktails, innovative "bar fresh" cocktails, such as Meyer Drop Martini, and local craft beers. The wine list includes 30 wines by the glass and presents affordable selections; the reserve list has about 10 offerings that reflect the local terroir. Hidden Crush is a proprietary Bonefish Grill wine created by various Central Coast wineries and offered only during crush season.

THE SETTING
The new modern interior design, led by Flavia Bisi, is highlighted by clean, contemporary lines blending warm, earthy color tones, golden hardwood accents, natural materials, wood and metallic flooring. A massive bonefish image fabricated from polished stainless steel "sequined" scales that glimmer and shimmer in the light, round and rectangular mirrors and wooden ribs is prominently featured in the dining room and curves around dining booths.

Customary dining tables covered with eco-friendly butcher paper are combined with sharing tables, booths and circular pods, while striking wine displays are positioned throughout. Adding to the ambiance are unique ambient hand-blown glass light fixtures and dramatic accent lighting. A row of cylindrical sconces etched with representations of mangrove trees filter light through the branches and hang between the bar and the dining room.

The mixed seating options in the expansive Big-City Bar include a communal table, and two 42-inch TVs hang in the back for sports viewing. Large windows in the bar overlook patio dining and an outdoor lounge area, both covered by a blade canopy with dark bronze finished wood. An accent wall on the patio features wood planking and a metal bonefish. A fireplace showcases a herringbone pattern composed of metallic tiles echoing the similarly designed wall in the bar.
