The four-course pairing menu begins with an amuse bouche of Shigoku oyster on the half shell with 2015 Nickel & Nickel Stiling Chardonnay, followed by Crispy Fried Halibut Cheeks with 2017 Far Niente Chardonnay. Next, enjoy Duck Cassoulet with 2016 En Route Pinot Noir and Snake River Farms Pittsburgh Style Wagyu Deckle Steak with 2016 Bella Union Napa Cabernet. Dinner concludes with Calvados Apple Custard paired with 2012 Dolce Late Harvest.
